Chef/Owner Roy Yamaguchi opened his original namesake restaurant in Honolulu in 1988, now his Hawaiian-fusion chain has 30 outposts. The upscale dining room has floor-to-ceiling windows, colorful wall-art and a bustling open display kitchen.

While turf is served well, the surf is to die for--diners' indecision can be cured by ordering Roy's Classic Trio: Hibachi Grilled Salmon, Blackened Island Ahi and the Misoyaki Butterfish. Delectable appetizers include Maine Lobster Dim Sum in a white truffle emulsion.
