Chef/Owner Roy Yamaguchi opened his original namesake restaurant in Honolulu in 1988, now his Hawaiian-fusion chain has 30 outposts. The upscale dining room has floor-to-ceiling windows, colorful wall-art and a bustling open display kitchen.
